Perhaps the Rec Tec was thrown off by the fact that I had run it at 400 and then took it down low so the barrel probably had a lot more leftover heat in it whereas the chicken cooled the cooking area down a lot. A temp differential doesn’t worry me per se, it was more that the differential changed that had me scratching my head. Always appreciate the thoughts and input. Not getting much smoke out of it, but still came out good and not soggy skin. I have not watched it for awhile, but it was something like completely dry racked chicken in fridge and then dusting with baking powder before cooking high heat. You could smell it across the house as soon as I opened the jug of mix haha. I somehow thought it was 3 hours of low smoke. I know i was following a buddy's chex mex recipe once and he said he left it on low and stirred it for an hour and then let it rest for a couple hours before bagging. Chicken isn't going to grab that much smoke though. If you want more smoke, just run a longer period of low temps. The oven dial thing just sat there at ~225. My prob was reading 225 and then down to 200 and sometimes up to 250 and down to 200. The pellet grills run in waves, on and idle and on and idle. I bought some cheap oven thermometers from Amazon to keep what I feel is a more accurate reading. Probes are always a bit off when I was testing my pellet too. I know a common issue is the Rec Tec RTD probe being too close to the smoker - not an issue here, straight up and down. No food was touching the thermoworks probe (probably about 2" from any food), but the Rec Tec probe is off to the side without any food around. I can't recall the peak temp it got to, but the thermoworks seemed to remain about 30-50 degrees below the grill.Īny ideas why they would have matched at first but then have been off that much during cooking? The only thing I can think of is that the thermoworks probe was in the middle of the unit, between food on the grill which could have been affecting the neighboring temp. Then once the meat was close to done, I cranked that sucker to full 600. Figuring I didn't want to cook THAT low, I cranked the heat up after about half an hour to 300 and the thermoworks went to ~250. When I dropped the temp down to do 225, the grill was showing 225 but the thermoworks was showing ~185-200. Any my wife liked the not-overpowering smoke flavor.įor the initial burn-in, The grill showed 400, but my thermoworks smoke showed 385-405 depending where I put it. Second, it was soooo nice to smell the wood burning fire while it was cooking and also to not have to worry about futzing with a charcoal grill. I guess there's no real way to get nice direct heat on these - or at least not as nice as a gas grill. I need to figure out my grill but here are a few observations so far:įirst, when I needed to put a good crisp on the skin at the end, I wound up having to fire up my Weber Gasser. I had some marinated chicken that I was going to cook and the recipe called for 225 for 90 minutes followed by a high-temp sear. So I fired that girl up and let her run at 400 for over an hour to burn her in. I made two calls to customer service and it was great to be able to reach somebody on a saturday.
